As you may notice (or not yet) Craftabuloso is all about my little world of crafts: sewing, card making, crocheting, DIY and cooking/baking. More about baking but I would like to introduce – step by step – some tasty breakfast, lunch and dinner ideas. And because recently I finally started Atkins diet properly, I will be more than happy to share with you all my low carbs ideas.
Here one of them: Beef Meatballs with Blue Stilton
Beef mince 350g
1/4 Onion (I used white, but any will be tasty)
3-4 Baby Plum Tomatoes (any little ones will be great)
1 clove of Garlic
Blue Stilton (you decide how much)
Ground Almonds (not too much, just to help to combine everything)
Decaf Coffee (similar amount like almonds)
Black Pepper (freshly ground)
Oil (I used Rapeseed one)
Chop: onion, tomatoes and garlic. Crumble the Stilton. Everything place in the bowl and mix well together. I’m doing it by hand but perhaps you prefer to use something more fancy ;)
When mixed form meatballs and dust in ground almonds. Fry both sides on well heated pan till nice and brown. Done. Don’t forget about lots of fresh leafy salad which is rich with fibre. I served with Bistro Salad mix which incl Apollo lettuce, Lamb’s lettuce, stripes of Beetroot, Red chard & Bulls blood. Added Kale and sweet little tomatoes, but be careful with them as they have more carbs than you think. So if you are on stage one of Atkins diet, have 1-2 little tomatoes max. As a dressing I used Rapeseed Oil & Balsamic Vinegar (be sure you have one without sugar!)
