I have to confess something…. I LOVE EGGS and they are 99% of my breakfasts (omelettes, poached, fried, boiled) but sometimes I do prepare eggs for a lunch as well.
A few of my low carbs lunch ideas you may be happy to try.
What’s in all those salads?
- Mackerel & fried Halloumi cheese, yellow & green pepper, dressing: balsamic vinegar & rapeseed oil, fresh salad with fresh beetroot.
- Fried eggs on mushrooms & baby tomatoes, with Blue Stilton cheese, dressing: balsamic vinegar & rapeseed oil, fresh green leafs mix.
- Fried eggs on smoked bacon with avocado, cucumber, goat cheese and selection of roasted nuts (almonds, cashews), fresh salad mix. Dressing: white wine vinegar & Olive Oil
- Fried beef with Mango, red onion, fried figs, pumpkin seeds and Parmesan, fresh salad mix. Dressing: balsamic vinegar & olive oil.
